Cucumber Mint Juice recipe – refreshing and easy to make juice using cucumbers and fresh mint leaves.

This cucumber cooler with mint and lemon is simple to make and a refreshing drink especially for hot summer months.

Now that it is peak summer, the best way to hydrate is to have lots of fresh drinks like juices or spiced buttermilk.

I usually use cucumbers to make salads like the simple but delicious kachumber salad.

So, when I was craving for some juice, and found no fruits available but just cucumbers and lemon, I decided to try cucumber juice. The first time I made the juice, I did not add mint. I was surprised that the juice using cucumbers turned out tasty.

When I made the juice this time, I added fresh mint leaves, which added a zing and additional refreshing taste to the simple juice.

Sweet cucumbers and tangy lemon along with refreshing mint leaves make for this delicious drink that you can prepare in minutes.

Cucumbers consist of around 96% water content, which helps in hydrating the body as well as it flushes out toxins. They have no calories.

They are a great source of magnesium and potassium, which helps in regulating blood pressure. Cucumbers are also rich in dietary fiber. Therefore, with all these health benefits, it is good to include cucumbers regularly in our diet.

How to make Cucumber Mint Juice step by step

  1. Firstly, wash the cucumbers. Cut off the ends of the cucumbers and peel them. Chop them into cubes.chopped cucumbers for juicechopped cucumbers for juice

  5. Blend these together in a blender or mixer to a smooth puree.blended juiceblended juice
  6. Strain the puree through a fine mesh strainer, into a large bowl, pressing the puree with a spoon to ensure all the juice is strained. Discard the remaining pulp.
  7. Add 6 cups water to the strained juice and mix well. Cucumber mint juice is now ready to be served or you can refrigerate and serve chilled.

Ingredients

  • 4 cups chopped cucumbers ( vellarikai / kheera )
  • 1/4 cup chopped mint leaves ( pudina )
  • 1/2 cup sugar
  • 2 tbsp lemon juice

Instructions

  1. Wash the cucumbers. Cut off the ends of the cucumbers and peel them. Chop them into cubes.
  2. Take the chopped cucumbers in a blender or mixer. Add chopped mint leaves.
  3. Then add sugar.
  4. Finally add the freshly squeezed lemon juice.
  5. Blend these together in the blender or mixer to a smooth puree.

  • I used granulated sugar. Adjust sugar as per your taste.
